Sodium hexaphosphate is an inorganic compound, food additive, and effective water softener. A salt of sodium and hexaphosphoric acid with the formula Na₆P₆O₁₈, it forms colorless crystals, dissolves in water, and forms crystalline hydrates.
Properties
Fine white powder with glassy transparent crystals, granules, or flakes, odorless and tasteless. Water-soluble, easily absorbs moisture, dissolves on contact with air or moisture, transforms into pyrophosphate (Na₄P₂O₇) and then into orthophosphate (Na₃PO₄). May crystallize from solution as crystalline hydrate Na₆P₆O₁₈·6H₂O. Does not burn, does not explode, and is not poisonous. It has high adsorption and homogenizing (emulsifying) qualities. In chemical reactions, it forms complex compounds with various metals, including calcium and magnesium.
The substance is present in the human body, participates in ion exchange and in the creation of platelets, partially regulating blood coagulation. Contributes to the accumulation and release of energy in cells. Sodium hexametaphosphate is useful for the digestive system, as it kills bacteria that produce the extremely dangerous botulinum toxin. It does not accumulate in the body and is authorized for use in food in almost all countries.
Sodium phosphoric acid belongs to the 3rd class of hazard (like table salt). Its dust may cause irritation of the upper respiratory tract. In case of ingestion of a large dose, acid-base balance may be disturbed, GI organs may malfunction, and dehydration may develop.
Work with hexametaphosphate should be done in a ventilated room, using means of skin, eye, and respiratory protection. The substance should be stored in hermetically sealed polyethylene bags reinforced with paper or cloth bags, protecting from air moisture. The room should be covered and unheated.

Application:
In food industry – stabilizer, emulsifier, color fixer.
Contributes to moisture retention, densification, and homogeneity of the product structure, extending shelf life, development of yeast cultures, and enhancing the action of antioxidants. It is used in the manufacture of processed cheese, margarines, canned meat and fish, semi-finished products of fast freezing, sausage products; potato products; cream, dried and condensed milk; products with pectin, glazed fruit, fruit ice cream; bakery products; liqueur drinks; sports mixes.
- In the textile industry – for preparation of working solutions (the reagent converts insoluble calcium salts into soluble ones).
- In tanning. For water softening, scale reduction, corrosion protection, boiler and piping life extension in various water supply and cooling systems, including railroad and industrial propulsion systems.
- For filtration of solutions and slurries in oil production.
- In chemistry, it is a component of descalers and detergents. Addition of polyphosphate to washing detergents gets rid of gray scale after washing.
- In the production of paper in the pulp and paper industry.
- In toothpastes – to reduce plaque and tartar and protect against acid attack.
- In the production of complex fertilizers in agriculture, in the photographic industry.
- In pharmaceuticals.
